Caldo De Pollo

Ingredients:

  • 250gm chicken fillets
  • Two corn on the cob
  • Four medium potatoes peeled and cut in half
  • Two large carrots peeled and cut
  • Two green bananas cut in pieces with skins on
  • One large zucchini cut in pieces
  • 500g pumpkin cut in pieces
  • 1/2 cup of cauliflower cut in small branches
  • Eight squash
  • Four spring onions
  • Three celery sticks cut
  • One bunch of fresh coriander
  • Bay leaves
  • Two tablespoons of chicken stock powder
  • Two cloves of garlic/crushed
  • salt to taste



Method:
Place your pot on the cooker add two tablespoons of oil, garlic and chicken fillets cook until brown. Then add water,corn, potatoes, carrots and bay leaves. bring it to the boil and let it simmer for ten minutes.
Then add chicken stock powder, zucchini, pumpkin, cauliflower, bananas, squash, celery, spring onions and coriander leaves. Cover and simmer for another ten minutes.
Serve hot with lime wedges and hot tomato salsa to your taste.
