Hot Spanish Potatoes

Ingredients:

  • 800g medium potatoes half cooked
    in water and cut in haves
  • One tsp cumin
  • One tbs paprika
  • One tbs crushed garlic
  • One crushed chilli
  • One whole red pepper
  • 1/4 cup red wine vinegar
  • Salt and pepper to taste



Method:
Place in a bowl chilli, cumin, paprika, garlic and vinegar and mix well.
In a pan pour about 2 tbs of virgin olive oil and cook cut potatoes till brown.
Then add the vinegar mixture and red pepper, cook for another 2 minutes.
Serve immediately garnished with fresh parsley or coriander.
