Meatball
Soup

Ingredients:
- 250gr
minced beef
- One
egg
- One
carrot diced
- One
zucchini sliced
- Two
potatoes peeled and sliced
- One
chopped spring onion
- One
chopped onion
- Six
cups beef stock
- One
lemon
- Chopped
coriander
- Fresh
chillis/optional
- Tortillas

Method:
In
a large pot, place carrot, zucchini, potatoes spring onion and beef stock.
While that is heating up, in a bowl mix mince, onion, egg, coriander,
salt
and pepper. Make little meatballs and place them carefully to soup.
Simmer for about 15 minutes. Serve with sliced fresh jalapeños,
lemon and tortillas.
