Scrambled Eggs

Ingredients:
- Six whole eggs
- One small Spanish onion chopped
- One small tomato chopped
- !/2 capsicum chopped
- 1/4 cup shredded cheese
- Two tbs butter
- Salt and pepper
- Tortillas

Method:
Whisk
eggs in a bowl, add onion, tomato, capsicum, cheese, salt and pepper.
Heat butter in a large frying pan and add egg mixture. Folding it carefully
while
cooking, switch the heat off just before the eggs are well cooked.
They will continue cooking from heat of the pan.
Serve right away with tortillas.
