Red Marinated
Peppers

Ingredients:
- Four red peppers
- Four cloves of garlic crushed
- One bunch fresh parsley
- Three tbs red wine vinegar
- Three tbs olive oil
- Six tortillas cut in triangles
- Salt and pepper
- Fresh jalapeños sliced/optional

Method:
Line
an oven tray with grease proof paper, place whole pepper on the tray and
cook them in the grill on high, turning them when they are bit black.
Once they are cook all over, place them in a tea towel, cover and let
them sit for 5 minutes. After that cut stalks and drain the juice from
the pepper in a bowl. Put aside. Now cut pepper into strips. Mix pepper
juice, sliced chillis, finely chopped parsley, crushed garlic, vinegar,
olive oil, salt and pepper, combine well. Place pepper strips and juices
in sterilized glass bottle with the lid. Keeps in fridge for two weeks.
Serve with tortillas as a dip, side dish or entree.
