Rice Pudding

Ingredients:

  • 1/3 cup rice
  • 1/2 cup sugar
  • 1/3 cup chilean flame raisins
  • Two egg yolks
  • 21/2 cup milk
  • Two tbs vanilla essence
  • One cinnamon stick
  • Ground cinnamon
  • Sliced bananas/optional



Method:
Soak rice in water for about two hours before cooking. Drain. In a deep pan,
add milk, vanilla essence, cinnamon stick and sugar. Combine well till sugar
has dissolved. Now add your drained rice, simmer for about 15-20 minutes.
Whisk egg yolks. Add eggs and raisins, bring it to the boil and serve right away
with sliced bananas and ground cinnamon.
